Turkey Veggie Taco BoatsBrown on medium high: 2 lbs turkey for 5-6 min in large skillet. Add 2 cans stewed Mexican style tomatoes (with juice) and mash to crush tomatoes. Add 1 cup pureed carrots (to make: steam 3 inch chunks then put in food processor with a little water if necessary). The rest I eyeballed: 1 tsp each of garlic salt, oregano, cumin, and chili powder. Add 2 tsp minced onion. Add some cornstarch if desired to thicken. Reduce heat to low, cover and simmer 10-15 minutes to thicken.
Dish into taco bowls and top with favorite taco toppings! My kids raved about it.
